The UF Student Chapter of The Wildlife Society is hosting Beast Feast -- their annual wild game dinner at Cypress & Grove Brewing Co. on Saturday, February 15 from 5 to 8 p.m.

The food will include wild game and invasive species, including hog, venison, quail, pheasant, and more, all cooked by Rollin’ Smoke BBQ

There will also be educational animals, informational booths about conservation, live music, a raffle, and a silent auction to win a bow from Bear Archery.

We are a mobile “pop-up” Barbecue company. Starting as Hobby on the pursuit to be my lifetime business. Everything from the savory sauces, to the delightful side dishes, all of our food is smoked/cooked with original Virginia style recipes.

Sunday Meat Sermon: The Stall.
What’s worst than the stall while Rollin’ Smoke... Nothing. The stall is caused by the evaporation of liquid on the meat's surface. This evaporative cooling works just like when you sweat while working hard. The stall can get frustrating because it lasts for hours. It is because the heating rate of the meat and the temperature of the smoker matches that of the rate of evaporative cooling.

Does that mean that your meat will lose all of its moisture and turn into a dry hunk of yuck? No. First of all, the meat won't remain in the stall forever. There is a finite amount of excess moisture available to be consumed when meat is in this state. The rest of the moisture in the meat is tied up in the collagen, fat, and protein where it will remain to create that succulent meat jello that we love. Once that excess moisture is used up, your meat should start raising in temperature once more.

Meet the Mr. Miyagi of Rollin’ Smoke BBQ. Born and raised in South Carolina “Face” is a lifetime smoker and longtime friend. The very first Full Hog I did, Face was there to show me everything step by step and honestly did most of the work. Since that day he’s dropped all kinds of tips and tricks on me to get my smoking expertise to where it is today. This @webergrills expert is a true pit master and I salute you my brotha 🤙🏾
