"My name is Santos Ramos and I am the owner of Scotto's Rigatoni Grill in Brambleton and Pomodoro Pizza Pasta in the Ashburn Ice House.
My love for pizza shops started when I was 16 years old. I moved with my cousin that was working at a pizza shop and I would watch them for hours mixing the dough, rolling the dough, making the marinara from scratch. It was amazing to me, and then to see customers enjoy the finished product was priceless. It just clicked. This is what I want to do, provide fresh made food for everyone to enjoy. From my cousins shop I went on to work in pizzerias in Boston, NY, Baltimore, New Hampshire and VA beach gaining knowledge and experience along the way.

In 2002, with a partner, we opened Pomodoro at the Ashburn Ice Rink. In 2006 together we opened Scottos. Since, I have become the sole owner of both locations running them alongside my wife Claudia. She is the backbone to the whole operation, my dream of owning my own pizza place wouldn’t be possible without her.

Since the pandemic started here in March I have seen side effects to small businesses.

The ice rink closed and we had to close Pomodoro along with it. We had to lay off employees, empty the fridges, and turn the lights off for 2 months. Since reopening, business still isn’t what is was since the ice rink isn’t operating at full capacity. To try and help, we have added other options to order like curbside pickup and 3rd party delivery.

At Scottos we were nervous. The first couple of weeks were hard but we started to think outside the box and come up with great menu additions for stay at home families, also adding contactless pickup and delivery to ensure everyone’s safety. I feel like we will come out of the pandemic stronger because it’s made us shake things up a bit and renew our processes.

None of this would have been possible without the people surrounding me- friends, family and all the employees that work tirelessly to serve Loudoun County. By God's grace, through many obstacles, I am where I am today. He has guided the way and lit the path. The Ashburn and Loudoun community has really supported us through this unprecedented time and I couldn’t be more thankful.
